                                         Micki's Simple Brownies

This is an old fashioned brownie . Because of the air whipped into the first stage of this recipe, it comes our crunchy and chewy....To make these brownies even more decadent, add a half cup of semi-sweet chocolate chips. I can't eat a brownie without a nice scoop of vanilla ice cream (and you shouldn't either).
 
4, 1-ounce       unsweetened chocolate squares
1/3 cup           Pure or Light Olive Oil
3 large            eggs
1-1/2 cups      sugar
2 teaspoons    pure vanilla extract
3/4 cup           flour
1/2 teaspoon   salt 

For added decadence only!!!
1/2 cup semi-sweet chocolate chips

Preheat oven to 375 °F Coat an 8x8x2-in pan with olive oil cooking spray. In a small mixing bowl melt chocolate and Olive Oil for 1 minute 30 seconds; set aside. In a mixer; beat eggs, sugar and vanilla at high speed for 5 minutes or more. Blend in chocolate mixture. Fold in flour and salt until just mixed. If adding chocolate chips, this would be the time. Mix in until just blended.  Pour batter into prepared pan.  Bake for 20-25 minutes or until a knife inserted into the middle comes out clean. Remove, cool slightly. Serve and enjoy!
(this recipe can be made with Whole Wheat Pastry Flour)
